First off, you are in Terlingua. Not Dallas, not LA, not NY. The menu is limited. A bit pricey until you realize how far everything has to be shipped. I am not a fan of cigarette smoke, but gladly accept there is one place left for smokers and millions for non smokers. You never know if your $2 draft beer will be served in a plastic cup or chilled mug. You never know if they will be out of half the menu items. You do know there will be a crazy mix of locals, dusty hikers, and weirded out families.
What we wanted to order, the bbq trio was not to be. They were sold out of the ribs and chicken. We opted for the pork chop (excellent) and the brisket (above average). We chilled for about ninety minutes until our order arrived. We spoke with a couple the next day in Big Bend who waited three hours up the road in the ghost town restaurant to get a table, then almost an hour to eat, so this wasn't too bad.
