Some reviews look for flaws in grills, not great veg, lack of choice and that's the beauty of a forum like Trip Advisor. I'm not one of them.
A grill is about meat, which is after all why you choose to go, so let's concentrate on that. From a variety of Uruguayan cuts to locally sourced rabbit, El Ceibo with it's open wood grill and vibrant atmosphere is a real treat for carnivores of all nationalities and one I'll go back to again and again for the Skirt Steak alone.
Is it great for veg and sides, no, but it's truly great at what is does best. Meat.
With a really nice wine list (try the Macia Batle from the Island) to boot, it's as good now as when I first went 20 years ago.
As a tip though, try to book early and get a seat outside. Their method of cooking makes it a bit uncomfortably warm inside.
