It is a bit far from Madrid (30 km south), but it is worth to eat there. Chef Sandoval is so talented that it is understable the michelin star. We were 15 people and were offered a menu of 60 €. The menu included visit to wine cellar with snack and drinks and 5 superb dishes I will explain below.
Snacks were a surprise from foie bombon to liquid olive, cod buñuelo and others like grape with "pistacho" cream and caviar. There I have two glasess of cava.
Then we were invited to sit on a our table. They invited us to a starter called "gachas with lobster and spanish jabugo ham". Out of this world. Then we starte menu.Foie with wild mushrooms and maroni, special fried egg with potato and sausage cake and "puntilla", then fish with "romanescu" and "tirabeques" (spanish not so common vegetables), after fish we conitnue with the young pork "cochinillo" which is coque top dish and for dessert chocolat at 3 different tastes with yogurt cream and "peta zeta". We watered this meal with a fantastic red wine (all we could drink) called "habla del silencio".
It is not cheap but every cent we paid worth it.
Service is excellent, pleasant and nice, restaurant is well furnished and wine cellar is spectacular
