Diner is built on the only New York style dining car platform and really neat to see. Omelets and pancakes are huge. Meatloaf was not bad. Love to go back...

“What's not Good here?”

This place is one of those little lost Gem's in the BCS area. Owner is from Philly and he makes a Cheesteak (Do it right, onions, mushrooms, peppers, and provolone not american cheese,and either no sauce or 57 steak sauce rather than the marinara which is to offered to please a broader pallet), Northeast Style Pizza (get Italian Sausage as the meat, add whatever veggies you like), Sausage Sadwich (with marinara), and awesome other americanna/southern offerings! But the real secret at this place is the amazing Breakfast!!! I can't even suggest just one thing to try, make it a once a week breakfast venture until you have tried everything LOL! Sadly I don't get down to Welborn often enough, and I do try to eat healthy most of the time, and unfortunately folks, Hullabaloo does not fall under that category. Overall my #1 of the best kept (restaurant) secrets in the Brazos Valley

“One of those "have to visit" diners”

The 60s themed diner is worth the visit. Good food, reasonablly priced. The diner is small so come early to avoid the wait, expecially on Fridays and Saturdays.

“Plastic plates in a diner???”

Whilst not a regular at Hullabaloo's we have been a number of times and had decent meals, most dinner or breakfast. We went there this Sunday for a breakfast and things, in our opinion, have gone downhill.

We were seated quickly at the counter because the booths were all taken. The first thing we noticed was that our coffees were served in plastic/pressed card, or at least disposable cups instead of the amusing china pigs' snouts mugs. The milk was dispensed from what would normally be mayonnaise dispensers. Not a good look.

The meal came reasonably quickly and was hot and decent-sized portions. The only thing was that the meal was served on black, plastic or biodegradable plates. Really! I am all for saving the planet but I'm sorry there is a place for this type of plate and that is the barbecue or picnic.

Following the meal we returned via the bar and sat for 40 minutes nursing a Mimosa and Michelado and watched a fairly decent musician.

The diner still retains the original booths and feel but the whole ambience was spoiled by the crockery.

“low quality management/oversight, slightly below avg execution”

Folks, this place is not cool. Despite seeing Guy Fieri on FN pump this place up, he's just trying to make a show. There is a reason he never has a single bad thing to say about a place he stops at, and it isn't that he only airs the "best." The food here is okay, but come on, its slow, horrible parking, smells outside, and is really a pretty dirty place. They import cheesecake from Cargegie Deli, which is great, but often they'll tell you its still frozen, and charge you full price for a frozen slice of cheesecake, thus the poor management. There are better options in town that don't cost as much and offer better service. Also, the hours of operation here are not convenient. I'll pass.
