Hubby and I have had the opportunity to travel the world and dine in some fantastic restaurants. And, as much as we relish those experiences, being born and raised in the South, we crave good, wholesome Southern cooking. You'll have to look a long time to beat the food at Silver Caboose! We usually try and eat lunch there at least once every week. While they do have a standard menu with old-time favs like frozen fruit salad, homemade chicken salad, and sandwiches ... the star of their show is their daily "specials" hand-printed on little sheets of paper you are handed when you're seated! They change daily and consist of 2-3 main courses and several freshly prepared and delicious vegetables expertly cooked with TLC! It's hard for me to even consider eating here without having my beloved turnip greens and cornbread. But every single vegetable and main course is worth the trip. Meatloaf like my mom used to make. Chicken and dumplings, roast chicken with dressing and gravy, chicken fried stead to start. Is it fancy? No. Is it wonderful? Sure is! I can't rave about this place enough. If you're ever in the Collierville area for lunch, you MUST give this place a try. Oh ... did I mention their fantastic homemade pies for dessert?
