Sovana Bistro is hidden away in a small shopping center about two miles from the downtown area. I made a reservation a week in advance, and it was timely honored with a charming window table. The service was uniformly excellent, and the waiter was both well versed on the menu and helpful in his suggestions. He added a lot to our dining experience. In fact, we followed his guidance and tried the tuna tartare appetizer (uniquely presented and memorable), the melon salad (with an aged balsamic - very tasty) and the scallop entree. The entree was the true winner - I live along the Chesapeake Bay, and was very pleasantly surprised by the quality and presentation of this dish. I recommend this restaurant without exception. It is good for a romantic evening, and also for a large group - we saw a family celebrating during our dinner. The noise level is conversational, and there is an open kitchen with seating at the bar for those who enjoy watching talented chefs at work. The restaurant is justifiably well reviewed all over the Net.
