We attended recently on a Saturday. The lounge area has a nice ambience and feel. Staff were attentive and great. We had 7 selections from the lounge menu which was adapted for three people and 2 deserts (2 of each) which was very filling. The food was enjoyable. Service was quick and the food arrived quickly and consistently. Basically one dish after the other once we had finished with it. Everything was well cooked, fresh and delicious.
Including the meals/deserts plus eight drinks and one mocktail. The cost was $200. which we thought was quite reasonable. We are looking forward to returning.

The restaurant was half full when we got there and didn't get much busier. Still, we waited what seemed an eternity to be seated, perhaps to encourage us to imbibe some pre-dinner drinks but we were hungry after our long drive. The main room is large and a little austere but had a large modern fireplace and was very comfortable on a cold night. It is an establishment that tries very hard to be 'different' as its name suggests, referring to, I assume, natural habitat. So...our Salmon jerky came suspended strangely on a wired contraption. Better still, the butter came placed on a rock. Yes, a rock and not a flat one so we enjoyed playing catch the butter all night. There was also a rock on the table that seemed to serve no purpose at all other than restrict our eating space.
The laughter alone, that our rock caused is reason enough to come but the fact is that the meal was excellent. Between us, four different meals and four different desserts and all of us delighted. Our one vegetarian member was well catered for with plenty of delicious options tempting even the most carnivorous of us.
The nuances were very odd but fun and the food wonderful. The wait of almost half an hour past our booking time wasn't and is the only reason it didn't get top score.

Our friends from Sydney recommended we dine at this two hatted restaurant in Bowral during our recent Southern Highlands short break. They had seen it advertised in their Sydney "Entertainment Book". All four of us were disappointed with our experience on the night at Biota. The service was slow and the advertised package in the Entertainment Book was not honored. It was three hours from start to finish for a three course meal. Each course was the same small size, (entrée mains and sweet). More like tasting plates than a real three course meal (one oyster, for instance). If you are looking for a good size meal and don't want to leave dissatisfied, don't go here. The dishes and presentation were okay but we felt the whole experience was pretentious and not good value. Verdict: We would not revisit.

Dined here recently whilst on a short golfing trip to local courses. Being a Monday night it was unsurprising that the owner/chef was not present, but in a well organised team this would not be an issue.
Chose the 5 course menu with wines, which I often do to respect the sommelier's expertise and be introduced to a range of wines one might not otherwise risk a bottle of. These wines on the night might not have been in the premium class but were quite interesting, flavoursome and an adequate background for the food, although at $10 each for a small serving were not high value.
The food itself surprised me in not attaining the heights trumpeted in the recently released guide to dining in which Biota was awarded regional restaurant (for NSW) of the year. No single course was memorable, I needed to reread the menu before penning this review, and nothing stood out as a signature item. My main thought afterward was this seemed to be more about technique than flavour or presentation.
Service was satisfactory with genial younger people on the floor, but short of "professional" standard anticipated in higher order establishments. The ambiance was pleasantly quiet and conducive to enjoying food, wine and company.
In arriving at my comments I reflected on a recent stay in France which included a truly memorable visit to Lameloise in Chagny. I must note that difference in price is well justified and renders Biota poor in value by comparison. I would not recommend as a destination, rather as a curiosity when in transit.

Difficult to pay for Sydney priced meals and fare that dont quite rate.
Service slow and artificially apologetic.
$'000s spent on new decor but just a modern overpriced
establishment.
Needs better trained staff
and 20% price reduction.
Local wines average and overpriced.
