“Excellent food and service!”

Ashley's is in West ward Easton across from the old Uncle Wesleys. Nice old stone home, small bar are with fireplace and then a small dining room. The food was excellent, the service was excellent and the place was not crowded. The owner gave us a tip on a jazz bar, which in the 22 years I've lived in Easton I wouldn't think of going to--What a great evening we had! Well worth the trip.

“Friendly neighborhood bar/restaurant”

Ashley's is a family-run bar/restaurant on 11th and Wood in Easton. Melinda is the owner, whose mother ran it before her. And Ashley is Melinda's daughter, a delightfully unconventional young woman who tends bar, serves, and generally pampers the guests. Ashley's is in an old stone home in a working class neighborhood near downtown Easton. You walk into the foyer where the day's food board is displayed - there are always awesome specials made by the chef, Susan, who creatively makes everything fresh. There are soups, like the seafood chowder, and oyster stew, which are a meal in themselves. After seeing the menu board in the foyer, you step into the parlor, where there is a huge, beautiful, antique wooden bar, and some tables and chairs. Behidn the bar, around the mirror, on the walls, hanging from everyone are Melinda's collection of angels, and other memorabilia. Great drinks including martinis, homemade sangria, and the usual array of draft beers, wine, etc. There is also a dining room, painted uniquely with a mural that continues on more than one wall, and with white tablecloths and personal tableside service. You can be casual, or dressed up, or in shorts or jeans, and you will still be made to feel at home. Melinda and Ashley treat everyone like friends the minute they walk in. There are interesting salads, like baby greens with apples, cranberries, nuts, and feta cheese. Homemade salad dressings. Burgers, wraps, full meals - all homemade and cooked fresh with fresh ingredients, many of which come from the Farmers Market in downtown Easton, the oldest continuously run Farmers Mkt in America. Susan, the chef, changes the board daily, and I have never had anything there that was not absolutely delicious, and served to look like something out of a magazine. Some of the things my husband and I have enjoyed include salmon with orange glaze, fried oysters, grilled portobello and roasted red pepper sandwich, packed-full turkey club wrap, grilled tilapia, and comfort food like meat loaf with macaroni and cheese. There are great homemade sides like cole slaw, macaroni salad, or a baked potato. When I was on Weight Watchers, they even made a special plate of things I could eat. When they try new things, they often get the opinion of those at the bar - like new dips served with crackers. And great homemade desserts. Amazingly, for all this food and friendliness, prices are great. Two full dinners with a couple mixed drinks and tip, and our bill is around $40-50. But you can get a Bud Light bottle for a couple bucks and just hang out and drink it, or have a burger with all the trimmings and fries for 5.95. It's the food, but moreso, it's the people, that makes Ashley's a gem. Go there, meet Melinda and Ashley, and I guarantee you'll become "one of the regulars."
