We had been told that this is the best restaurant in Redmond, and we hope that that's not true.
We've tried it several times, and have occasionally had good food, but never have all members of our party had good food. The veggie burrito, the seviche, and the pork tacos are reliably good. The crab enchiladas are horrible--mushy throughout. The pork osso bucco has been excellent on one occasion, and jerky-like (dry and chewy) on another. The brisket has been tough and dry both times we ordered it, with a burned-tasting sauce--not even close to the tender, juicy, fall-apart dish we'd hoped for.
The busboys are attentive, but the wait staff is over-taxed, and it's hard to flag a server down.
But most unforgiveable in a Mexican restaurant, the margaritas are watery.
We'll probably be going back--our friends and neighbors like to support the local businesses--but Diego's sure wouldn't be our choice for a fine dining experience.
