I grew up in Chicago when there still was the "Stockyards". Meaning, Chicago had, and still has, good steak. My first "grownup experience" of a steak house was George Diamonds. I was eight years old, and I remember a dark place that served steak that was so tender I could cut with a fork. It was a classic Chicago experience, and I have not found anything that comes near, until I walked into The Ringside. It is like stepping into Chicago, circa 1960 - nice, dark decor, beautiful leather seating, and the best damn steaks this side of the Rocky Mountains—or at least this side of the Cascades. I love coming here. I love the careful attention of the waiters, the great wine selection (they have something like 10,000 bottles in their new cellor) and I love their aged beef. My husband and I split their 18 oz aged ribeye - and were in heaven. Birthday time at our house is Ringside Time.
