Meal was pretty good, but with Phillepe missing the atmosphere was stagnant.

Gilbert can make wonderful meals and has a mediocre personallity.
Still one of the best eting places in Carlton.
Bring our own wine.

“A little slice of France in the willamette valley”

I've been coming to Cuvée for several years and enjoy it every time. The food is consistently good, w/ a nice selection of Oregon and French wines. Gilbert, the owner and chef is a talented and entertaining host. The mushrooms w/ semolina cake is a particular lunch favorite!

“Just what we were looking for”

After some wine tasting on Saturday afternoon, my husband and I were looking for a small meal to enjoy before heading back to our B&B when we wandered into Cuvee. The restaurant was empty when we walked in and we were immediately greeted by the Chef/Owner. His personality was refreshing and we enjoyed the banter throughout the meal. He has a very dry sense of humor so be warned if this is not your thing. We started off with a Sauvignon Blanc that he recommended to pair up with our Clams, Oysters (Huitres), and Mushroom (Champignons)dishes. The wine was great, the food even better. The oysters were perfectly pan fried and the sauce paired well. The mushrooms with the seminola cake was rich and wonderful. The clams were light and spectacular. We then decided to try the carmelized onion pizza and pair that with a pinot. I can't believe I am going to say this, but it was one of the best pizzas/flatbreads/tarts I have had. The crust super thin and crisp, the onions carmelized to perfection, the smokiness of the meat and the creaminess of the cheese....I can taste it now! While we didn't have any main courses, based on the sampling of appetizers we had, I wouldnt hesitate to recommend this place to anyone. Unless you are going early as we did, I would recommend a reservation because it looks like the place fills up quickly and the prices reasonable. I look forward to coming back next visit to Oregon!

“Not the best of nights”

The food at Cuvee was excellent! That said, the remainder of our experience was not. It was obvious that at least one (or more) of the wait staff was missing. We were seated by a shopkeeper brought in to help out. Thirty minutes later our wine arrived and eventually our food. There were 3 very loud groups of 6 or more . . . each with at least one member who had been to too many wine tastings. Conversation at our table of four was difficult. Other reviews indicated that a chat with the owner/chef was a highlight of the experience. Undoubtedly, he was too busy in the kitchen for that. (Or was he the absentee?) And had he been available, could we have heard him? Again, the food was excellent. If we're in the area again, we'll return , , , hopefully to a full staff and a quiet room.

“Gem in Wine Country”

This restaurant was recommended by our innkeeper and was super. As good a meal as we would have had in a AAA in Portland. I had the steak and husband the salmon. The sauces were delicious. The owner visited each table and had quite a sense of humor. Added to the "flavor" of the place. There was a prix fix menu which was 3 courses and excellent value. We topped it off with the crème brulee which was delicious.
