Gave Blue Canyon another try after a two year hiatus. Once again they prove to be consistantly mediocre. As usual the hostesses do as little as possible to make you fel welcome. They do not stop their converstaions among themselves when a guest aproaches. Service as always been hit or miss. Major gaps between courses ( dont know if that is a server or kitchen problem) and never an apolgy. As for the food, The bread is very tasty and usually served with a flavored butter or Tappinad. On our last visit the calamari was cooked perfectly, but was void of taste in the breading. The house salad was presented on a chilled plate with a chilled fork, always a nice touch. Unfortunately the entres were hit and miss. The Pretzel crusted Trout, which is a main stay on the menu was served hot and has aleays been very tasty. My wife had a Pasta dish, which was obviously sitting for a while due to sauce having a film and being tepid at best. Friend had a Steak and they missed the temperature by two temps, unfortunately he had to eat it due to the ungoddly lenght of time dinner took. The last dish was a peppercon Tuna dish. The Tuna was cooked a perfect rare, but the peppercorns and the seasoning which usually compliments a dish like this was overwhelming, making it barely edible. Our table was fantastic on this visit, but the server really did nothing above what an outback server would do. There are many other restaurants in the Hudson area that make Blue Canyon look like amateur hour. Maybe we will be back in another year or so

“Expensive but good”

Blue Canyon is one of our favorite restaurants in the area, but it is somewhat expensive. Servings are generally large (but they do have a smaller plate menu which is more than enough). They have a great wine selection and a different atmosphere from the typical restaurant. Service is polite and professional, but they are in absolutely no hurry. Outside seating is awesome in the warmer months.

“Great atmosphere”

Overall this was a great dining experience. We ate on the porch with a beautiful view-the entire restaurant is very pretty. We ordered the blue canyon cabernet - it was a great cab & well worth it! The calamari was plentiful but tough. The salad was good, but pricy & had to be ordered ala cart. Our entrees (tenderloin & scallops) were fantastic...cooked just right. Our server was very good, and overall it was a nice, but slightly overpriced, evening.

“Tasty food and drinks, so-so service”

I have been to the Blue Canyon several times, with family and for work dinner parties. Several other people have commented on the poor service, and I sort-of agree. The servers are generally very efficient, but as a whole, they're not very friendly. They certainly don't go out of their way to make you feel welcome (unless you're dropping some serious bucks). If you don't care about that kind of thing, the Blue Canyon has really great food. Steaks, chicken, seafood, you name it, it's always cooked to perfection. They have some really great appetizers and salads, too. The bartenders also mix up some fun cocktails. Since it is on the pricey side I wouldn't say this a restaurant you need to hit just for any old day, but for a special occasion I think it's a good choice.

“Wonderful dining experience”

We both enjoyed the excellent food and the wait staff was remarkable. The decor and view are just amazing. Hubby had the wild boar with whipped golden potatoes and green beans along with a lobster bisque. I too had the lobster bisque and the most amazing sushi roll. The price is expensive but well worth it!!!
