Description: Caves house was designed in 1897 by Walter Liberty Vernon as a retreat for the wealthy landowners of NSW. Mr. Vernon was the NSW Government Architect from 1890 to 1911, and designed many landmark buildings throughout Australia, including the Art Gallery of NSW. At Caves House, Vernon's design included an enormous grand dining room, completed in 1924, which is now our magnificent Chisholm's Grand Dining Room. Chisolm's is one of Australia's two remaining 'grand dining rooms', and dining in Chisolm's is one of the many 'must do' experiences whilst staying here at Jenolan Caves. The ambiance and historical significance of the room is an experience in itself, and when matched with our Executive Chef's menu, is the perfect end to a long day of exploring the Caves precinct.

“Taste bud delight”
Reviewed April 12, 2013

A fantastic meal in lovely, quaint surrounds. I have eaten at Chisholms occasionally over the years. I wanted to treat my family to the a special environment, that being Caves House. Among us we ordered the Beef Medallions and a Crispy Chicken dish and sides of a garden salad and steamed vegetables. The food quantity was ample, its presentation lovely and taste incredible. The meats were very tasty, tender and lean. The steamed vegetables were lightly buttery and the sliced potato bake extraordinary. There were a mix of clientele: groups, couples and families. The venue suitable for all. Staff were professional and welcoming with a sense of humour.

I highly recommend Chisholms (along with Caves House for accommodation and the Caves of Jenolan. Close to Sydney, yet you feel a world away.
