“Thai cookery course”

My wife and I attended this course at Tideswell and had a thoroughly enjoyable half day tuition in the art of Thai cookery. The facilities were excellent and the tuition from chef Joe was clear and informative. There was plenty to cram into the half day and we left with three excellent meals we had made to savour later and a desire to try out more Thai cookery at home. A very good course and fully recommended.

“Introduction to Brewing”

This was a good, informative, but casual and light hearted introduction to the wonders of brewing. The small microbrewery allowed hands on involvement from weighing out the ingredients, to choosing the flavours and malts, to warming up the liquor, sampling hops and choosing the end product.
aspects on the day were split between the breery and the class room, lots of opportunities to ask questions of an experienced brewer.
Just waiting for the beer we brewed to be delivered

“Intermediate Cookery Weekend”

Fantastic! My sister and I are 'home' cooks and were keen to learn new, and brush up on old, skills. Well we got what we wanted. Gutted, boned and skinned fish (and smoked the mackerel), filletted a Guinea Fowl, French trimmed a Rack of Lamb, Panna Cotta, Souffle, Ceviche (look it up) Pastry, knife skills, blow torches - phew...
Lovely environment, very relaxed and informal and Joe the Head Chef was very encouraging and had a great attitude. We both came back enthused and committed to trying the new dishes out!

“Fantastic Experience”

We attended the Middle Eastern course on Wednesday evening and my gosh, what an evening it was! The set-up of the school is great - a separate area to sit and chat before the classes and a chance to meet your fellow class mates. After this you move down to the teaching kitchen which was easily big enough to accommodate our class of 6 - I think they can fit 12 in there?

The class itself was great - lots of fresh local ingredients (most of the herbs are grown in the community garden, and many of the veggies are grown locally). One of our party required halal meat and this was provided with no problem. The class was set at a good pace, and the super chef (Joe) was fun and informative. The classes didn’t feel rushed, but similarly there weren't any periods of standing around waiting for stuff.

We made a complete meal for two, with main dish, side, and accompaniment and the food was really delicious. We had the opportunity to try the one made by Joe and then took our own home. I shared mine with the other half, but really I’d have liked to have kept it for myself.

I would definitely return to this cookery school again. Great time, great value for money, great food. Well done Tideswell.
