“Mexican Utopia”

My week at Casa Carmelita was perfect. The location is idyllic, staff welcoming and classes brilliant. The morning cooking sessions were enjoyable and extended beyond the recipes to Estella's cooking philosophy. Afternoons were free for excursions, reading or wandering around the gorgeous property. My accommodations were magical, full of character and fresh flowers. I hope to go back to experience another insider's look at Mexican Cooking in the future. Thanks, Jon and Estella

The Mexican Cooking Vacation was a wonderful experience all around, and is highly recommended if you're looking for something "off the beaten path." The accommodations were rustic but very cozy and nice. The cooking experience was similar to my experience in many US cooking classes-- hands-on work involved a lot of chopping, mixing, some dough rolling, and tamale filling, with much of the actual cooking being performed by Estela while we all looked on. Classes were taught in serviceable English. A different breakfast was served every day (with fantastic coffee), and the food we prepared got progressively better as the week went on, and they gauged the spice tolerance of our group. Apart from the school, our group visited a couple of archeological sites and some pottery shops, and while I missed a lot of the nuance at the sites due to my limited Spanish capabilities, they were breathtaking nonetheless. I found the whole trip to be an incredible experience, and would heartily recommend it to those looking to experience interior Mexico.

I could not have hoped for a better experience! Estella and Jon are fantastic hosted and are an outstanding teaching team. Estella shares her family recipes with a focus on dishes from Puebla and one is more delicious than the next! This is the kind of cooking that you can not learn from a book. Estela share so many tips and techniques along the way and makes each authentic recipe easy to follow and to recreate at home! Casa Carmelita is a wonderfully peaceful place to relax and unwind. My room was cozy and I especially enjoyed falling asleep to the crackling embers of the wood burning fireplace each night. The capital of Tlaxcala has a very charming little historical district that is not too far from Casa Carmelita. I would also highly recommend taking an afternoon trip to the nearby ruins. I am looking forward to visiting again for more fantastic cooking and R&R.

We just returned from a wonderful week at Casa Carmelita. Estela, Jon, and their assistant, Maria, are warm and thoughtful hosts; they made every effort to ensure our comfort and to enhance our “Mexican experience”. An added bonus—Maria makes one hecka great margarita.

Estela and Jon are outstanding teachers. Along with sharing their knowledge of Mexican cuisine, they shared cultural and philosophical perspectives on life and living. We learned new words, new cooking tips, and fresh viewpoints. The days flew by, filled with laughter and learning.

We stayed in La Casita—truly a charming and comfortable “home-away-from-home”. Casa Carmelita’s location isn’t in town (part of its charm), but Jon is an expert at arranging transportation for trips to surrounding sites and cities. His chauffeurs are punctual, courteous, careful drivers. We would recommend the Mexican Home Cooking School to anyone who wants to learn traditional Mexican cooking in a relaxed, enjoyable setting.

Our Puebla Culinary Vacation package was wonderful. It was an eye opener to Mexican cooking as we know it and the recipes we prepared were delicious. Estela and Jon made us feel very comfortable and we had a blast with our fellow students. Our accommodations were first class, spacious, fireplaces, fresh flowers and all on beautiful grounds. It was so much more than we expected. We would do it again in a heartbeat.

My grown daughter and I decided to take this trip together and learn to cook some authentic dishes at the same time. We had a wonderful time. Each day, we were given recipes of the dishes we would learn so we could make notes right on the recipes. After class, we had free time to relax or explore the area. Jon and Estela were very welcoming, very informative and very patient when some questions were asked repeatedly over the course of the week. The food was delicious and plentiful. I have already made 2 of the dishes we learned and today I purchased ingredients for 2 more dishes to make this week for family dinners. My daughter found this vacation opportunity for us and I am very glad that she did!

Classes involved a perfect combination of cooking instruction with life lessons and great stories from Estella. The recipes were delicious and authentic, we had plenty of hands on time preparing the food, and the best part was eating it! Although you cook most of your own meals, they are beautifully plated and served to you at mealtime, by a very friendly staff, and often on the lovely patio, so it feels like fine dining. The overall stay was a nice blend of time cooking, learning about the culture and free time to explore the region.

The rooms are very nice and comfortable. I suggest bringing earplugs - the town parties at night (at least when we were there) and the joyful noise of fiesta can get old late at night. While there is not much to do right around the casa, it is easy and inexpensive to get around by friendly taxi drivers arranged by the casa. We did a number of the expeditions suggested by Jon and enjoyed just about everything we did (one trip got rained out).

I recommend visiting Puebla and Cholula while in the area, both are beautiful colonial cities, along with the archaeological ruins. We extended our trip with a few days in Mexico City, which was well worth it. Everywhere we traveled in Mexico felt safe and the people we encountered were helpful and friendly. Don't expect everyone to speak English - it's best to know some Spanish. At the cooking school it wasn't necessary, but it was definitely helpful for excursions.

If you are looking for serious cooking instructions and the amenities of a five star hotel, look elsewhere. If you are looking for an authentic introduction to Mexican cooking and culture this is the perfect spot. We had experiences that we would have never had if we were traveling on our own, and were delighted by the warm welcome we received.
