A simple restaurant in Ajijic with a limited menu, but tasty fare, I usually take the daily special which is always a pleasant surprise. The owners are from Madrid, charming and friendly, always looking to please their customers. Their paella, which must be ordered in advance, is as good as I have tasted in Spain( but not as good as my wife's).

New B&B in Ajijic opened by family from Avila, Spain. Tried it the other evening. Good food at a good price with excellent service. Menu is pretty basic with standard Spanish tapas (Tortilla Española, Gazpacho, Shrimps w/garlic, etc.) They will make Paella if you call ahead, and they plan to offer it regularly on weekends (a short wait as it is prepared to order, not reheated) in the near future. We had the "platillo del dia," and it was excellent, a pork (tender) stew with tomatoes and other veggies served with rice and preceded by a small very fresh salad. They offered a complimentary small plate of tapas (bread, cheese, and a little ham). You can buy house wine by the glass or margaritas. The final pleasant surprise was the bill which was under 300 MXN, including drinks.

Brand new restaurant in restaurant rich Ajijic/Chapala area. Owner José María and family have moved to Mexico from Madrid where they closed up their long running restaurant in June 2013. Their Mesón Quixote opened in late February 2014. They have spruced up a building that was formerly a B&B until three years ago and a day school in the interim. Their menu is limited at the moment and traditionally Spanish. Order an drink and it comes complete with tapas. Menu items include gazpacho, tortilla española. gambas al ajillo (large garlic shrimp), ensaladilla (basically a tuna salad), ensalada mixta, pork loin. Paella is promised. The wine was a Lower California Chauvenet red which was very adequate. The settings are very simple at the moment. We ate in a tranquil garden under an avocado tree at a simple trestle table. Three of us agreed it was a lovely evening with good, authentic tasting Spanish food, and very attentive service. A very good opening.
They also offer 3 or 4 rooms as a bed and breakfast.
