At dinner here recently with my wife and a business associate from Italy. We enjoyed tilefish and monk fish with a great bottle of Chardonnay. The Calamari was really great for our appetizer. A really memorable evening. Make sure you call well in advance for a reservation as the early tables often are not available.

One of our best friends and his wife got together with us for a kids free double date. We chose this place to get away from the normal - we live in Washington/Greenville. Anyway, I will say it didn't live up to the hype, while my steak was simply delicious and the grilled romaine was excellent, that was where the compliments stop. Our waitress while cordial, was not nice. Let's not even get in to the multiple others that brought good to the table. While I commend the team work - they were borderline rude when delivering the other items we had ordered. We will not be going back anytime soon... I have heard lunch there is much better - I hope that is the case...

Stopped in at the recommendation of a "local friend" for soup & sandwich lunch - hot ham & cheese and tomato soup. One of the best of both I've ever had. Can't wait to go back for dinner!

On Saturday, May 10th, four of us made an early reservation to dine at On The Square in Tarboro, NC. Two of us had never dined here before, but all of us had met Inez and Stephen recently at the Beaufort Wine and Food and had made a goal of visiting the restaurant at our next opportunity. We are so glad we made the trip, it will be the first of many.

To start, the wine list is strong by all standards, and fortunately for us, Spain is represented very well. The four of us were so excited by some of the selections that we agreed in advance to get carried away with our wine ordering! We started with a bottle of 2000 Artadi El Pison to accompany our First Appetizer of light and tender Fried Calamari, as well as with our Second Appetizer of Sneads Ferry Steamer Clams in a rich and savory broth touched off with small lardons of either bacon or pancetta, and green onions. The broth alone was divine!

By the time our Third Appetizer of Fried Chicken Livers had arrived, we had opened a bottle of 2003 Artadi Pagos Viejos, and we were well on our way to an overall outstanding meal with beautiful libations. Everyone enjoyed a salad before moving on to our entrees, and each of the salads were delightful and exceedingly fresh. By now, we had decanted a 2001 Vega Sicilia Valbuena and we were off to the races. My mind was completely blown with the wines by this time and I was not believing the quality of the juice we were opening in this small town Eastern North Carolina restaurant, just an hour from home. Not only were the selections themselves remarkable, but more impressive was the fact that these were bottles with proper aging to be enjoyed as the winemakers had intended. All three of them were still youthful, but were coming in to their prime.

For our entrees, our table ordered the New York Strip Frites, the Crab Cannelloni, more Snead's Ferry Clams, the Soft Shell Crab appetizer, and the Asparagus Risotto to share. Not a bite was spared! I did not ask, but I suspect the New York Strip was grass fed. It was tender and juicy, cooked to a perfect medium rare temperature, but not as rich and fatty as a grain fed strip ordinarily is. Either way, it was a perfect accompaniment to the Valbuena that was in our glasses. The crab cannelloni was a complete surprise to me and exceeded what I had expected. I will order it in the future. The clams though had to be one of the most memorable dishes due to the exceptional rich flavor of the broth, their tender steamed meat, and the fact that not one of us bit any sand or grit as we enjoyed them.

Last of all, we shared a piece of the homemade strawberry cheesecake, and nearly three hours later we were finishing an almost perfect meal.

The four of us are travelers, eaters, and drinkers. We love to travel in search of great food, and we have each trekked to far corners of the globe in search of memorable dinners whether they consist of finger foods in paper trays, or fine dining with amuse-bouche to start and sorbet between courses. The best part about the evening we had when we dined at On The Square in Tarboro, NC is the simple fact that we only traveled an hour from home, but we went on a food and beverage journey that took us through some of our favorite down-home flavors such as chicken livers, clams, asparagus, strawberries, bacon, and most of all southern hospitality. You see, not only did we eat and drink like kings and queens, even more spectacular was the warm and generous reception that we and every other guest received upon arrival. We left feeling like our business was appreciated, and our return is mutually anticipated by all.
We are already talking about our return trip to Tarboro and On The Square. Thank you to Inez and Stephen Ribustello, and all of their staff, for a spectacular culinary performance!
