Description: Herons delivers a dining experience that is both refined and relaxed. Led by James Beard Semifinalist in 2016 and 2017, Executive Chef Steven Greene, the expertly trained staff warms the room, providing seamless service that helps guests enjoy the pleasures of an elegant meal. The main dining room offers a full view of the kitchen, while floor-to-ceiling windows let in plenty of natural light and overlook the terrace, lawn and wooded lake beyond. In addition to the 98-seat main dining room, a semi-private dining room seats up to eight, while the private dining room accommodates 12 and showcases pottery by North Carolina artist Ben Owen. Outdoor seating invites al fresco dining in the spring, summer and fall. The neutral palette of the décor in Herons provides a sophisticated, yet understated backdrop to the bright and inspired flavor combinations artfully presented. The dinner menu changes seasonally and draws heavily on produce harvested from The Umstead’s own sustainable farm. We were visiting family locally but hotel visitors should definitely eat at the hotel here at least once. We went for a Saturday night dinner and were only offered the chef's tasting menu (2 choices $75 for 4 courses I think and $125 for maybe 7) though my mother-in-law who had been before thinks there is an a la carte menu too. We did not get the wine pairings but instead got a bottle since several of our party do not drink much. The wine was very good but the food on its own is even better. For me, the best thing about the food was that each course mingled several flavors and textures and each worked to produce a delicious dish. I would definitely go again to try something else. It is expensive but worth the price. The service was fabulous and the room is beautifully appointed from plates to flowers. In fact the public rooms are worth walking through afterwards to enjoy the flowers, art, etc. There is a nice terrace outside for dining but it was not open during our visit due to heat and the possibility of a downpour. I give 4 stars only because MIL was insistent that there is an a la carte menu.

We were in Raleigh overnight and getting ready to head back home on Saturday morning. I had read about the Umstead and Herons in Southern Living. So we looked it up on the GPS just to check it out. We were pleased to discover its at entrance to the beautiful SAS campus. We went in and inquired about brunch. To our delight they were still serving and had a table open in the shade outside overlooking the lake. What a delightful brunch getaway we had! My husband had the crab cakes Benedict and I had an eggplant sandwich with a light but yummy side of fresh veggies. Would've loved to have tried one of the bloody Mary's if we had not been driving. Our server was impeccable. I love how they make note of our last name and always addressed us as Mr. or Mrs. After brunch we took a walk around the beautiful trail which goes around the lake. The brunch prices are not overly expensive at all. Most everything was in the $12-$15 range. Highly recommend this beautiful hotel and restaurant.

This sleek eatery is spacious and glamorous. And most importantly, the creative menu serves excellent "new American" cuisine that is creative without being outré. There is no molecular gastronomy here; instead a tried and true expert chef sure of his skills. The delightful surprise is some of the flavors, like a savory/sweet dessert with a rye-based baba (as in "au rum") with "picked strawberries." Utterly delicious!! The menu allows most diners to create an ad hoc prix fixe menu accompanied by skillful wine pairings. Service is phenomenally professional while still gracious and warm.

We had lunch and dinner here during our stay. Excellent food and service. Not inexpensive but worth the splurge if you're into food and wine.
