Perfect, romantic hotel with bags of historical charm

We visited the Abbey for a one night stay after my husband ate in the restaurant last year and fell in love with it's charm, (and that of the hosts!) From the moment we walked through the enormous front door we were transported to a historical wonderworld. Katie could not have been a more hospitable host and really welcomed us like visiting friends rather than hotel guests.
The room was enormous, traditionally decorated with a huge comfortable bed and top notch linen, and a huge window overlooking the gardens and pool.
Pre dinner drinks on the terrace were a treat and a lovely place to enjoy the fading sun and stunning view, but walking into the cloisters for dinner was the real show stopper! Beautifully laid tables, all white linen and country flowers, and a huge white canvas awning made for the most romantic dining space I've ever had the pleasure to eat in.
The set menu was all beautifully executed and my seafood allergy was thoughtfully avoided by an alternative (a delicious pea soup).
The atmosphere was like a grown up house party and soon the dinner guests were chatting to eachother and comparing tasting notes (or maybe that was just our end of the courtyard!)
We were lucky enough to have a chat with the chef, Tom, who happily shared his lavender creme brulee recipe and our waitress Collen was a total sweetheart (and a mean cyclist by all accounts!) Archie, who kindly stayed up late to serve us after dinner drinks deserves a special thank you too.
We completely fell in love with The Abbey and will be back to sample it's abundant charm soon.

        I wish we could have stayed longer - anyone would.
        Comfy beds, a beautiful place full of history, excellent food, amazing staff, welcoming, friendly hosts, beautiful surrounding scenery, flowers and bird song everywhere with Swifts wheeling and screaming through the bright blue sky .... all in all our kind of place!

        This is located SW of Carcassonne in the hills, in a small village which had a rose festival in late May. It is ideal for small groups and offers super, friendly accommodation. The owners are delightful and only have very well-trained staff. Our visit was part of a group which took up all the accommodation but it could easily have served as a centre for rest and relaxation whilst touring the superb ancient towns nearby.

        Katie - what a wonderful hostess. Dinner- 5 course culinary journey that would be difficult to surpass- Hospitality second-to -none and a wonderful,friendly,intimate dining experience!         We came for dinner one night during our stay in the area but will certainly be returning to stay at some point in the future. This is a very special place. From the minute you arrive there's an atmosphere of grace and calm and you know you're in for a treat. You arrive to the scent of the past, treading along corridors of gleaming polished tiles, past huge vases of bosky flowers to the balmy terrace with lovely views. The delicious food is served in the beautiful and relaxing salon filled with antiques and decorated with historic painted tapestries. Katie was a charming and generous host who's obviously passionate about her home and the service she and Peter provide. A great experience!

        We had a 2-night family stay in mid-August. It was wonderful in every sense. As soon as we arrived we were made to feel welcome and shown around the sprawling historical house and grounds. Our room - really 1 connecting rooms - was exactly what we need. It was enormous, beautifully decorated, like the rest of the house - and supremely comfortable. Swimming pool & gardens a delight; garden restaurant and food divine. And to top it off, dog friendly! Highly recommended.
