Paul and Fred have created a dining experience that you have to try when you are in Aruba. The concept is simple, but it is one that I believe would be hard to duplicate. They limit the number of guests to 14-17, have one seating 5 nights a week, and Fred cooks a 5-course meal that you will not forget for a long time. While the restaurant has only been open for a year or so, getting a reservation within the next 3 months will take a little luck. Reservations are only accepted online, but they do require confirmations the day of the reservation and welcome those without reservations to call in at 3:00, in case someone cancelled or did not confirm. This is how we were able to get in. Paul is the ultimate host and the type that would be the life of just about any party. But this is his party and he works hard to entertain you from the time your reservation is confirmed until you leave with a huge smile on your face at the end of the evening. You are greeted at the front door with a glass of champagne and are then escorted to the back porch so that you can get to know Paul, Fred, and the other guests. Shortly there after, you are shown to your assigned seats which all face the center table where Fred will assemble each of the 5 courses, but also the Bull (a very rare rotisserie from Europe, according to Paul). Paul reviews the menu, the wine pairings, describes what to expect for the next few hours, and even extends an invitation to visit the kitchen to watch Fred cook. While the menu changes nightly based on what Fred finds at the store, here is a sample of what we were served earlier this week: Salad of Cornish Hen with red port reduction, Veal Ravioli, Halibut with Risotto leek lobster sauce, Classic Beef Wellington, and small assorted desserts. Each course offered wine pairings that were excellent! While the evening was not inexpensive, it was worth every cent. I'm not sure how the food, service, or entertainment could have been any better. If ever there was a restaurant that deserved a TA rating higher than 5, this is it!
