I love Japanese food, but rarely get it because my wife won't eat it. But there isn't all that much choice in Canandaigua, so my wife was willing to try it and now she likes it!
Everything I have tried is pretty good and the prices are reasonable.

I want to start my review by questioning the one review of Sakura giving it a terrible rating.

We have found Sakura in Canandaigua to be a very good and enjoyable sushi restaurant.

Okay, it is not Nobu in NYC and this is not Japan or Los Angeles but to our find this is pretty much the best sushi restaurant in the entire Rochester area (except for Shiki in Rochester which is Japanese run and is excellent and authentic). Yes, Sakura is Americanized sushi but with the variations and fusions in sushi cuisines happening everywhere it is a worthy eatery. It is much better than the Sakura on Monroe (which often has cold rice) and is much more expensive. And now that California Rollin's two location are using the groupon deals to death (which cause extremely long wait lines and poor service and very overworked chefs) this is our usual choice. For the price, and especially the lunch time deals, this is a very good choice. We have eaten here many times.

The service is very good (almost too much service at times, however). The decor is nice. The nigiri is quite good. The fish is fresh. The maki rolls are good. The tea is very good. The salad is the standard. The miso soup is good. The value is very good. A quite decent and tasty place for lunch or dinner.

The owners of Sakura are Chinese, as is most of the help. Not that this is a bad thing, as the 'Five Chinese Cuisines' are among the best in the world. Unfortunately what you get in America is NOT really Chinese food but rather "Chinese food for white people."

That said, the people who own this restaurant have no understanding of Japanese food whatsoever.. The 'sushi chefs' are just 'fast food makers' who have learned somewhere how to put fish on rice, or not. They may as well be working at Burger King. They understand nothing of making sushi. They do not know how to make sushi rice, or cut fish, or choose fish, or create original rolls that blend. They do not understand the correct use of wasabi. They do not know how to make ponzu.
No Japanese waitress at a real Japanese sushi bar would ever behave as most of these waitresses do.
The kitchen staff have never studied the art of Japanese cooking. The sauces have no character. I can not imagine how they make their soup stocks--out of a can, I would guess.
Do they use real kombu, bonito, the correct miso? I doubt it.

The 'house of the flying knives side is just that..entertainment for unsuspecting people who don't know any better. It is not Japanese cooking. But it probably is 'fun for the whole family.' So is Disneyland, and that is fake also.

In the past there were 2 true sushi chefs in Rochester- one at Tokyo in the mid-1980's and a brilliant chef at The Plum Garden in 1997. They of course both left town for better establishments in Toronto and San Francisco. I don't know of any now. Although the owner of Shiki knows fish.

good local spot that offers fresh sushi. Owner is always there and very helpful. Its usually tough to find good sushi in a small town.

great place. good food and enjoyed it very much. The only complaint is they charge $1 for spicy mayo if you take out. They don't charge it if you sit and eat. They need to stop nickle and diming. Just add a dollar to the cost of the sushi!!!
