Following Tripadvisor's advice, we stopped at Billy Ray's for dinner. The restaurant is a bit hard to find, with no obvious signage on a side street in Roswell.
My friend and I shared the Southwestern Beef Wellington. The dish was beef wellington with a definite New Mexican twist. The beef was wrapped in a tortilla and served with red and green chile (of course), rice, and beans. The service was excellent, and the chef came out to chat.
Our server recommended the cheesecake for dessert, and, although we usually skip dessert, we were convinced to order a piece. It was well worth the additional calories.
Several times a year we drive through Roswell, and we plan to be back at Billy Ray's.
