The queso was the best we have had in Las Cruces. What makes it even better is El Sombrero serves it with fresh corn tortillas! The green chili sauce was the perfect combination of spicy and tasty. The red chili was spicy but far too bitter to enjoy. The sopapillas were made with whole wheat flour and very greasy. The restaurant was packed, loud, and too few servers/bus staff (greeters were unwilling to help other staff) made the service sub-standard.
