Description: Although it's the largest city founded in the 20th Century, Las Vegas retains the energy of a frontier town where the unexpected is still a daily occurrence. The dining scene is equally as adventurous and Charlie Palmer is one of its trail blazers. Sensing that Vegas was about to undergo a renaissance, Palmer made an early investment, opening Aureole in the Mandalay Bay Resort in 1999. The show stopping menu under the direction of Executive Chef Vincent Pouessel combines the classic cuisine of Aureole with the theatricality of Las Vegas in dishes like Olive Oil Poached Oregon Petrale Sole with Truffled Brussels Sprouts and Ahi Tuna and Veal Shank "surf and turf", while a four-story, temperature controlled glass and steel wine tower-the largest in the world-houses 10,000 of Palmer's award-winning 50,000 bottle list, made accessible by an elaborate pulley system presided over by "flying wine angels" clad in black spandex Calvin Klein. After all, this is Vegas.

“Top Notch for Top Dollar”

Revisit to this restaurant after a 10 year absence. Like the last time, food was delicious and service impeccable! As long as your prepared for a pricey evening you'll not be disappointed in this restaurant.

“Happy Hour”

Sat in the bar for Happy Hour. $6 house wine $8 appetizers. We split 6 apps and drank 3 glasses of wine between us. Excellent service, terrific food, fabulous atmosphere. All for under $100. Never could have experienced the restaurant side of Aureole for that price.

“Interesting Dual Tasting Menu”

The most common Tasting menu choice was a series of four courses of two different items per course.
The wine pairings worked usually with one of the selections but not both so we discussed which it fit with best.
The atmosphere could be improved.

“Enjoyed every sip and every bite!”

My husband and I visited Aureole in Mandalay Bay after we attended the Michael Jackson ONE Cirque du Soleil show. We were looking for some drinks and small plates for the evening. Plus, we wanted to see the wine tower! The wine tower was impressive and it was cool to walk around it in order to get to the Lounge area. We even got to see one of the 'flying wine angels' get a bottle of wine! We sat at the bar and were totally impressed with the bartender David Shochet. He took excellent care of us, was great to talk to and very fun! We enjoyed some wonderful red wine suggested by David and we never had an empty glass! We tried many of the late night happy hour small plates options as well as some of the small plates options on the regular lounge menu. Each and every one of them was DELICIOUS!!! Compliments to the Chef! Overall, we enjoyed every sip and bite we had and definitely plan on dining here again on our next trip to Las Vegas! Highly recommended!!

“Our 40th anniversary dinner”

We had a wonderful anniversary dinner at this amazing restaurant in the Mandalay Bay. It started when we were led to a table facing the wine tower. My husband had a beautiful vase of a dozen red roses on the table with my name on it. Then I was told to look up. The wine angel came down the wine tower holding a sign that said Happy 40th anniversary! My husband had prearranged that, but the restaurant was very accommodating for him.
The service was exceptional. They made sure the wine was exactly to my liking. We both had steaks that were excellent. The chef made us a surprise dessert. It was three different desserts that were really works of art on a marble slab. He wrote happy 40th anniversary on it with chocolate icing.
This was the best experience I have ever had a restaurant for a special occasion. Everyone was so friendly from the hostess to the manager. Excellent food, exceptional service.
