This was a Michelin Star rated chef. The meal itself was a production that was on point at every turn. It was almost like a play. All the dishes were visually appealing. Even items that I would not normally eat were very good. The restaurant view was amazing overlooking the strip. The steak that I had for the main course was one of the best that I have had. The deserts that everyone had were also very good.
Don't miss the bathrooms..

So, first things first. We have never been treated better at any restaurant. The service was the best in our lives. Every waiter was courteous and prompt and genuinely friendly. (And there are multiple waiters because different waiters bring different items).

Price wise, its what you expect to pay for such a restaurant. Its not THE most expensive that we've been to, but its in the top three. Again, it is what it is.

However, the problem is assessing the food. We've been to such restaurants before and it really is a hit and miss on the palate. People's palates are different, and for this evening my wife and I were pescatorians. So we had to opt out on lots of meat dishes. Some of the appetizers were amazing, some were so-so. I absolutely loved my sole (one of the best that I've ever had -for a whopping 68 dollars I might add), but my wife's sea bass was definitely not the best we've had, and we both agreed that the taste was too bland for our liking.

The way I see it, when you go to such exclusive chef-famous restaurants, there's no way to be sure you'll truly get an experience you like. People have different tastes, and I'm sure the sea bass would have been highly admired by others.

Twist is a fantastic restaurant, a culinary adventure.

The chef's tasting menu, and the Discovery wine pairing were a perfectly mated dining experience that is in the top 3 meals I've ever enjoyed.

The food is exquisite: flawless techniques, subtle flavors, intricate and interesting platings. The amuse alone had nine elements, including a very upscale Jello shot, a grapefruit gazpacho, and a tiny edible black rice flour bowl, filled with seasoned vegetables.

We enjoyed the six-course menu, and each course was a joy, with one exception. One course was heavy, salty, and seemed out of place in the progression of the meal. But that was a small flaw in an otherwise flawless meal.

The Discovery pairing was a treat, as was the sommelier's commentary on the various pours. Some of the wines themselves, were you to drink them alone, would seem incomplete, or a bit bland. However, when enjoyed with the course pairing, the puzzle pieces dropped into place, and they each complemented the other, creating a greater whole. This was expertly done, and I would highly recommend the pairing.

The service is exceptional. Our waiter, Sunday, was professional, engaging, and personable, striking the perfect balance between professional service, and conversational engagement. That is, he provided great service, including narration for the tasting menu, but never crossed the line into too much familiarity. The choreography of the service was extremely well-done, from dish presentation to bussing. Each associate performed their tasks demonstrating well-honed skills.

The restaurant itself is elegant, located on the 23rd floor of the 5-star Mandarin Oriental Hotel. The restaurant décor is understated, with lighting reminiscent of champagne bubbles, and china chargers that match the crackled plaster on the walls. It's obvious that every detail has been considered. Twist is exceptional, in every sense of the word.

Twist at The Mandarin Oriental surpassed all expectations. The amuse bouche set the scene for the many delights that followed. The service was warm and at the same time refreshingly professional. (a special note of thanks to Catherine) Each course was so outstanding that the word marvelous comes to mind. Especially creative were the sauces and soups that accompanied the very fresh and high quality main ingredients. The crispy langoustines were served with a lovely fresh herb soup called "zezette bouillon". The Rose champagne buerre blanc sauce for the sole was so light that it was like heaven on a plate. My husband enjoyed the chestnut and coffee veloute with his foie gras and a plum and tamarind purée with the rack of lamb.

Dined here with a group in their private room last weekend and it was a highly memorable experience. Superb menu, wonderful preparations, presentations and tastes. The seared foie gras was amazing as was the house made lavender ice cream and everything in between. Impeccable and professional service and a wonderful wine list to boot. The view and setting also make it a lovely experience. Bravo Chef! :-)
