After reviewing Craig's comments on Dream Dinners, I decided to try it out. They are open only on certain days, and reservations are required. The owner/manager, Bonnie, is extremely helpful and friendly, as well as knowledgable about her establishment. This is a franchise operation, based in Washington state (but with most of their stores in California - naturally), so they have a great economy of scale, with set menus for the entire chain. When I arrived for my session, there were a half-dozen others there, who were regular customers. They knew what they were doing - I didn't, but the super-helpful staff made it (relatively) easy. Craig has described the setup. It was as he said. I have tried 4 of the entrees that I put together that day; they were all good (some better than others), but all were American Heart Association-sized portions. Three servings was actually enough for two people with healthy appetites.
