If you are in the Corbiere take the time to find this amazing restaurant in the small village of Lanet.
Hidden down a farm track road and sat alongside the Aude river it comes with its own trout farm that make the bulk of the starters and mains. Once you've chosen the waiter wanders off with his net to pluck the fish straight from the water.
The food, prepared by Vincent the chef and owner, is amazing. Simple, but incredibly skilled dishes. The trout tartar starter is just fantastic.
It doesn't end there though. I think I've had the best desserts I've ever eaten at this restaurant. Again, all produced on site and made with local produce.
If this was London you'd expect to pay double. And you wouldn't even get the picturesque setting.
The business has only been going a year or so. Long may it last.
