“Imo's Rocks”

I love the taste oh Imos ! Wonderful pizza. Folks from out of town often don't get it at first. Trust me, Imo's is what pizza should be like. Only down side is it is a bit expensive but worth it!

“It's a St. Louis thing . . .”

I don't think you can say that you've visited St. Louis until you have eaten an Imo's pizza--it is a tranformative culinary experience that teaches you everything you need to know about St. Louisans, their history and their culture. "St. Louis pizza" (which in my opinion begins and ends with Imo's, even though many other restaurants have tried to copy their recipe) is defined by its very crisp, thin, cracker-like crust, topped with a thin, watery but spicy tomato sauce and a layer of provel cheese ( a variety made only for the St. Louis market) that is heated to a lava-like consistency and texture. Toppings are usually laid in between the sauce and the cheese, increasing the danger of severe mouth and chin burns-so be careful!!

It took me 10 years from the time I moved to St. Louis before I began to appreciate and even savor this pizza, and I will say it was worth the effort. I can't visit the town without eating at Imo's at least once. And if you go--don't forget to get an Imo's salad with house dressing. The salad consists of white iceberg lettuce covered with shredded provel cheese--sounds awful, but the dressing makes it all taste like an absolute dream of heaven.
