At the recommendation of the Brainerd Co-op, we tracked down Prairie Bay (a bit hard to find; just off 371 - look for the Arby's sign) for a late lunch. Nice character and decor, friendly staff, and really interesting dishes.
My wife and I had the "Build Your Own Bruschetta" ($13). It comes on a big, long plate -- plenty of small pieces of roasted garlic toast accompanied by small sides of spicy sun-dried tomato jam, carmelized onions, roasted garlic (half bulb - delicious), basil pesto (very good), extra-virgin olive oil, smoked tomato coulis (tasted like plain raw tomato), marinated portabello mushroom slices (very good), fresh smoked mozzarella, roasted bell peppers, and shredded parmesan. Just excellent and filling.
Also tried a soup of the daily -- some nice spicy local sausage -- also delicious.
Timing wasn't right to try out their interesting on-tap beer selection.
