Rise Up coffee is a good example of how good you can be if you choose to stay small. The Easton location (one of 3 on Maryland's Eastern Shore) is also the roasting facility and it is both interesting to look at and wonderful to smell. In addition to excellent coffee the food items are great - especially the waffles and the yogurt (both around $5). There is an eating area in the back of the shop, and tables and benches outside. Food items are picked up from an old train car outside - kind of funky but keeps the crowds manageable in the coffee shop itself.

The care and attention that goes into every cup is not missed. Paired with excellent service and affordable prices, Rise Up is a gem. Breakfast sandwiches and pastries available, and they have a coffee cart at the Easton Farmers Market on Saturday mornings. Knowledgable baristas will gladly make your drink of choice, without the condescension that some coffee bars feel is necessary.
My favorite part is always the $2 Medium House Roast Express Lane. Skip the "half-caff, soy, no whip, extra shot" crowd and just grab a cup, serve yourself and pay via the honor system. You'll end up wishing there was a RiseUp Coffee Cart closer to your office.

I'd give it 6 stars if I could. Wonderful flavorful coffee whether you buy it from a barista or get the beans to take home. And the place smells delicious because they're roasting the beans right in the back of the store.

If that's not enough for you...
They have personal relationships with their growers/suppliers. Check Facebook for lots of great pictures of them on a buying trip in South America. All organic coffee and fair trade. The baristas are just the right amount of friendly and helpful. Wifi. Convenient location on the 600 block of Dover Street. Lots of parking. Pop -up farmers market on Saturday mornings in the dead of winter when the bigger market is closed (January- March)... Customers of all ages.

This bare bones coffee shop makes a little go a long way: excellent coffee, simple (good but not extraordinary) baked goods served by friendly, committed folks...and the space for sitting & sipping is like the open, well-lit space of a bowling alley without the lanes. They don't pretend to anything more, and they don't need to.

I live in Pennsylvania, but visit the Eason, Maryland area fairly often. My routine when in the area always includes a visit to Rise Up Coffee. The coffee and sandwiches are excellent and seating area quite comfortable. Maybe most importantly, the service is always friendly, prompt, and courteous.
