Was staying next door for a trade show and ended up eating there two nights in a row. Same thing both nights, filet. Everything was good, but paying that much it should be.

The food was very good, service was great and the prices were through the roof. It was a great place to meet with clients but be ready to get out the card...

While the restaurant was packed, we did not have any problems discussing business. Our server was attentive, yet not intrusive, which is important to me whether dining for business, or pleasure. The steaks are what you would expect at any high end steakhouse, but the crab crakes were a step above even some of the well known seafood establishments. Be ready to share the sides, as they don't skimp on the portions. The one drawback is the lack of parking, but that is easily overcome by doing the valet option.
Tip: Ask for one of the smaller rooms off the main dining room. The tables are smaller and you don't compete with the large groups when trying to conduct a conversation.

Ok. Lots of great reviews; but I found the experience underwhelming. If you are staying near the conference center then this place is a good option for steaks etc. But if you have to drive here, I would recommend going to Rosewood (easier to get to and better food). Now, I have to say, Im getting bored with the steak house experience (and the associated costs). When Im being asked to pay at the low end $40 and at the high end $80+ i expect something different and unique; unfortunately Gibson's doesnt do that.

Typical steak cuts and aging techniques with the standard sides. Having said that, Gibson's local favorites do offer some interesting steak alternatives at somewhat reasonable prices.

Consistantly great meals, be it steaks or fish. And a creme brulee dessert to die for - and big enough for at least 2 people!
