went to a wedding on a friday night at the onion in lake barrington. we got there early and went to the bar for a drink. we learned about a farckin, cask conditioning of beer from english tradtion. they make the beer and mix in a little sugar to make natural carbonation, and they pump it from steel casks in the basement. they started serving it in the afternoon and by evening it's all gone, no CO2, so they can't keep it for long. very educational and really good beggars dark beer. the food was good, but the buffet style left something to be desired.
