The chef's a bloody genius. I don't know how he does it in the closet of a kitchen but the food is outrageously good and a steal at the price. And you can BYOB. If you're within an hour's drive you should eat here (it puts most if not all of Sun Valley to shame).

“Excellent Food and Service in Stanley, Idaho”
5 of 5 bubbles Reviewed July 20, 2013

On 4 July, a group of 27 arrived for dinner; we had reserved the entire restaurant since it is usually closed on Thursdays. Melinda, Ashley and Chef Shane did an amazing job. The fried shrimp appetizers were as fresh as any I have had in Houston, and the Caesar salads were delicious. The Chilean Sea Bass was grilled to perfection, and my wife is still raving about the Kobe Beef Tenderloin she devoured without offering me even a taste. Although I do not typically indulge in dessert, I could not resist Chef Shane's exquisite Crème Brulee. The wine list is a bit limited, but the selections are well paired with the menu. All in all, I would recommend Back Country Bistro to anyone lucky enough to make it to the little slice of heaven also known as Stanley.

Absolutely delicious meal! Simple yet intricate, it consisted of mouthwatering shrimp as an appetizer, soup or salad, and then THE BEST STEAK I HAVE EVER HAD. Cooked to perfection, it melted in my mouth and was full of flavor and color. And then the dessert!! Hand made creme brulee. 'Nuff said.

I highly HIGHLY recommend this place to anyone and everyone. Go now!

“Wonderful food and staff”

This little gem is hidden in Stanley, ID and unless you hear about it from a local, chances are you will end up at one of the other 5 restaurants in town. This is not only because the cuisine at the Bistro is the best you can find in this part of the world, but because they only accept a certain number of reservations every night: they simply only seat as many people as they can comfortably feed. Chef Shane painstakingly prepares each part of the 4 course meal while Melinda and Ashley deliver it to hungry patrons. I feel very fortunate to have eaten at the Bistro 3 times in the last month. I will be definitely be back for the antelope and the grilled caesar salad. This is fine dining at its best in terms of quality and presentation. Do not be fooled by the fact that Stanley is only population 63- Those 63 people have some great hidden talents and you would be wise to see what the Bistro has to offer.

“4 1/2 stars”

Wonderful evening dinner. The antelope was so tender it melted in your mouth, I know a cliche, but still so true. The creme brûlée was one of the most perfect ever. There were five tables for two servers, so we had very attentive, but not overdone service. In retrospect, I think the soup was a little too salty for my taste and the spice was hot enough that it covered up a few flavors. But in general, a great, great dining experience.
