I have been going to Copper Canyon since before it was first opened. Chef Brian came into the little Japanese restaurant where I was having lunch. He didn't notice me listening in on his conversation explaining to a friend how he was hoping to purchase it and remodel it. The little Japanese place was good, but not quite making it. Brian transformed it into the best food place in Nampa. In fact they outgrew the first place. Since then they have moved to their present location. It is simply the best place in Nampa to eat. Their service is great. The staff is friendly and helpful. Their specials are truly special. Presentation is always fine but never pretentious. The last time we went, we made reservations a day in advance and everything was ready for us when we got there. You can chance on just dropping in, but I'd make a dinner reservation. Come for an important lunch. Come again for a romantic dinner. You'll not be disappointed. You'll want to return, because there is something new being created all the time. The seafood dishes are especially well crafted. A little off the freeway, but well worth the trip into town.
