I have always been a fan of Chef Brian Inaba as he always creates full bodied delicious plates with layers of deep flavor. He recently moved his restaurant to the Broadmoor Gold Course in Nampa and while I do like that it is newer and cleaner than the old building in downtown Nampa, it is a bit sterile in personality. Thus the 4 star rating. It is similar to a family style restaurant with generic décor. The saving factor of this atmosphere is the fabulous views of the golf course. The servers were different this last time I visited and I do miss the personal service I used to receive at the old location. Not bad service, just not the warm smiles and genuine caring Im used to with Copper Canyon. I ordered my favorite, the chicken polenta, and it was delicious yet a little less garlic and a little less fresh greens than I am used to. Fresh and crisp vegetables balanced the savory polenta. My friend had the chicken masala and she raved about it. They had always started our meal with fresh bread and it was missing from every patrons table this day. I did not ask about it. I have previously had fabulous fresh and filling salads here as well as some tasty seafood and steak specials that they feature every day. The soups have always been rich and deep with flavor. Copper Canyon is a great restaurant to celebrate aromatic balanced flavors and great food while supporting a talented chef and a local business!
