I've been to Ding Darling National Wildlife Refuge 6 times, and it's always a wonderful experience. Some visits are birdier than others, but you will always enjoy beautiful vistas of water and mangroves. In this trip, we observed 50 White Pelicans on a sandbar, a Great Egret consuming a lizard, lots of Sanderlings, White Ibises, Ospreys, Yellow-Crowned Night Heron, Snowy Egret and Tri-colored Heron. There isn't much hiking here, but it's great for biking and there are a few short trails for walking.
The visitor's center is awesome, complete with excellent interpretive exhibits. During this visit, we enjoyed FL Junior Duck Stamp finalists from students all over the state.
