After inquiring as to where the best dinner on the Island was, our Hotel valet recommended Fin Bistro. From the moment we sat down and began looking over the scrumptious offerings and hearing from our waiter that the emphasis was on providing only the freshest fish caught and served daily we were hooked. After starting off with the Yellowtail Avacado Crudo, we split the Roasted beet Palm Heart Salad. Both had excellent flavor and presentation. But for me the best part of my meal was the entree "West Florida Cobia" It is absolutely, hands-down the most delicious fish i have ever eaten. White, thick, flaky and buttery in taste, this fish will not disappoint! It was served prefectly cooked with a medly of squash, asparagus and wild mushrooms. In a word PERFECTION! Our meal was so delicious the first night we were there that we made reservations for the very next night before we left the establishment! The second night did not disappoint! I've been back home for two weeks, and still want to go back and eat at Fin Bistro! Do yourself and favor and go!
