“Amazing, creative and delicious!!”

We dined last night in the main dining room at S.A.L.T.. It was a great experience from the beginning to the end.. We were greeted by Ben and while waiting for our group to arrive had innovative drinks and hard to find beers from Sean at the bar. The interior is clean and modern with no remnants of the former restaurant that was in the same location. Our waiter, Tony, had great wine recommendations and the service was attentive without being overbearing. Ben came by and upon request, gave some food recommendations. We went with all of the items mentioned by both Ben and Tony and are glad we did. Everyone at the table tried different appetizers and meals and we got to taste a large amount of the menu items. The owners Tom and George both came by the table and told us about some of the new creations for the S.A.L.T. menu. We had oysters, mussels, bone marrow, foie gras empanadas, steak, tuna, scallops, pork chops and much more. The food and drinks were excellent and a new level of cuisine for the Keys. While not inexpensive, considering the amount and quality of the drinks and food we enjoyed, we found the price to be very affordable. Can't wait to go back!

“Home Run - and they are just warming up !!”

You know, every once in a while you find yourself out of the gastronomic box and it blows you away. This was our experience. Starting out with the staff - a wealth of knowledge about the selections including help with selected pairings. A different menu for sure by folks who know what they are doing. Tom , one of the owners stopped by asking about our impressions . Nice guy. He and his partner an award wining chef seem to have the right chemistry to pull off what we are sure to be a winner .
PS - Tom, please add in an espresso offering to top off the meal .

“S.AL.T. - not quite there yet, but well on the way”

S.A.L.T. opened with a full menu in the upstairs Cana lounge this weekend- couldn't wait to try it. The menu is interesting and a welcome change from the Keys usual. The chef/owners have clearly put some thought into their offerings with an eye to Asian-Latin influences. We made reservations and were seated promptly. The lounge has been redone - stainless bar , concrete floor, interesting and understated art. Tables in the Cana lounge are all pub height with comfortable seating. The menu offers a well rounded choice of fish, pork, beef and a vegetarian dish as well as appetizers and salads.
Plating was precise and appealing. We ordered the Duck Fried "Rice" and the Smoked Beef Tartar appetizers. The tartar had a light smoke flavor and was nicely offset by the anchovy aioli and Yukon gold herb chips- a great mix of richness, crunch and a bit of acid. The duck fried rice, made with quinoa instead of rice was a lovely blend of flavor, but a bit too heavily sauced for our tastes- fortunately the flavor blend is nicely layered and the fried egg topping helped to balance.
We also tried the compressed watermelon and golden beet salad - mixed reviews at our table-my companion [who isn't a beet fan] liked the flavors of the beets and watermelon touched with chive oil - I found myself really wishing for some texture and thought it was somewhat monotonous.
Main courses were Braised Lamb Shank ~ Dr. Brown’s Root beer, house hoisin glazed, udon noodles, snow peas, carrot, blood orange gremolata, Bone In Ribeye ~ Jalapeno onions and balsamic relish, sweet corn pudding, soy glazed bok choy and Beef Tenderloin ~ Bacon corn butter, truffled yukon potato’s, garlic ginger snow peas . The meats are all prepared sous vide, which I adore as it typically results in meltingly tender proteins. The tenderloin easily met this description- served perfectly rare and well flavored. The rib eye was spot on medium rare but chewy and didn't offer as robust of a beef taste as I would have expected with a bone in preparation of this cut. The lamb shank - hmmm- I love lamb - and shanks are a particular favorite but this one fell short. There was a lot of heat in this preparation, so much so that all I tasted was the one note of spice- it really overwhelmed the dish. Hoisin sauce typically contains red chile peppers but is generally balanced with sweet/salty/acid layers resulting in nuanced flavors- this one was one enormous note of chile. It wasn't too "hot" of a taste, but all I tasted was that one note- I missed the lamb!
This weekend was presented as the soft opening, and as is usually the case with soft openings service was spotty. The salad came out with the appetizers, there was a lengthy delay between these and the main - almost an hour. The filet, while perfectly rare, was cold. Table clearing and drink service was uneven. However, there was a steady crowd and staff was adjusting. Service and timing was also complicated by the need to use a dumbwaiter for delivery of dishes from the kitchen as the lounge is on the upper level of the building. Hopefully, these issues will evaporate by the time of the hard opening.
Menu pricing- reasonable for preparation and portion size if the dish quality lives up to descriptions by opening day.
I wish there were wine pairing suggestions offered - we didn't try any of the wines from a well chosen selection as we opted for cocktails, but I would probably have tipped in that direction with guidance from the servers or menu.

“Great place”

Just had Friday night date night with my husband. The menu had a lot of choices & what we had was very good! The wine list was great as well.
