We stayed in Key Largo for 9 days in January and used the Overseas Highway throughout our stay as it's the only way to move between Keys.The trip from Key Largo to Key West is 100 miles and it takes 2 hours due to the speed limits along the way.
At the beginning of our stay I stuck to the speed limits but found local vehicles were bunching-up behind me, getting very frustrated and overtaking despite the no passing rule. The solution was to drive like the locals and add 5mph to whatever speed limit was in force! The views from the highway are not as good as you might expect as the sea is obscured by vegetation and buildings for most of the route. However, you do get to see the sea on the many bridge crossings.
As to Key West, it's probably worth going once and after a couple of hours you'll probably want to get out. Like most famous resorts, it's expensive, overcrowded and over commercialised. The fact that it has a deep sea port means there is a constant stream of the dreaded cruise liners dumping thousands of people onto this overcrowded Key.
