This is a restaurant inside of the Hilton Doubletree Hotel. On Sunday it offered the standard hotel breakfast buffet, which was fine, but a bit pricey at more than $30 for two w/tip. The small tables are sized more for bar patrons than for breakfast - especially for a traveling family. There was only one employee servicing all, and while she managed well, you couldnt miss her having to run around. It's convenient for hotel guests.

Palettes is located in the DoubleTree Hotel. It is relatively small; I estimate that it can seat only about 30 people (excluding the bar). We had gone there for Thanksgiving dinner, and found the food and service to be very good, so decided to book it for our usual group of friends for New Year's Eve dinner.

Turned out to be a mistake. The first clue that they have a very small staff was when they requested that we submit everyone's dinner choices beforehand – for a group consisting of only 10 people. We did so, and after we arrived, they confirmed our choices and had them all correct. That's when things started to go awry.

It took them a rather long 20 minutes to bring out the soup and salads for the few who had ordered them. That was followed 20-25 minutes later with the entrées – also much longer that it should have taken. Apparently the meals had been sitting in the kitchen for some time before they were delivered, because all of them were tepid. My wife and I were the only ones who had ordered the Kentucky Onion Rib eye, which came with mashed sweet potatoes. The potatoes were not even tepid; they were stone cold. I mentioned this to the waiter. In a well-run restaurant, the response would be, "I'm very sorry, sir; I'll remedy that right now", whereupon he would return the plates to the kitchen and nuke them for a minute or so. Instead, the response was "Gee, I don't know why; I'll ask the chef", and after asking the chef, responded, "The chef doesn't know why that happened". Clearly indicative of staff that hasn't a clue how to run a restaurant.

Our meals were not the only ones that were almost cold; other couples complained afterward that theirs were that way, too. While the food the others got was rated very good for taste and quality, our rib eye steaks were tough and so full of gristle that they bordered on inedible. They were definitely as far away from Choice as you can get and still sell it for human consumption. Add to this the fact that the dish cost $29 and you have a combination of factors that tell you that this restaurant is close to being a scam.

The DoubleTree is otherwise a nice hotel, but if you happen to stay there or anywhere in the Wilmington, DE area, avoid Palettes.
