Dining in resort areas always seems punishing. So I was amazed to have such an extraordinary meal recently at Espuma in Rehoboth beach. We did not have reservations, but got lucky when a group cancelled. The food was magnificent, both in presentation and flavors. We got the 3 day cooked pork roast, which was subtly smoked and incredibly moist. We also shared the vegetarian plate, which consisted of 5 different vegetarian tappas-like appetizers. A panoply of different flavors all distinct, but beautifully combined. Excellent service, very attentive but not overwhelming. I don't give out 5-stars easily, but this restaurant and chef deserve it.
