“Enjoyed It”

We love a good pub and really enjoyed sitting in the bar area to eat and watch the flatbreads being prepared. The beer selection was great. My husband loved his burger and it was cooked just how he liked it - medium rare. I had a sandwich so big I could only eat half (unusual for me). We started with humus, a really generous portion and very good. Service was attentive and fun.

“Still a great spot, but has slipped a little bit”

Dined for lunch on 4/30/2013
2 Adults, (no alcohol) total, with tip $58.20

I’ve dined here many times since they opened and this is a wonderful restaurant for great food. Their menu is interesting but a little limited. They have lost just a little of their edge in the past few months. Presentations have not been as tight, their wonderful truffle onion soup a little more watered down, their service quite a bit slower. However, the Republic still gets 4 stars and is a great spot in an area that needed some good restaurants.

“Perfect Place to talk & relax”

What is a Republic, anyway?

The dictionary says it is a government in which the people elect representatives
to govern. It is also a state in which the head of government is not a monarch
or hereditary ruler. A less used definition says a Republic is a philosophical
dialogue that Plato wrote for his toga wearing homies around 4 BC.

That last one works a little for the Republic Restaurant in Bloomfield, CT
because this is a warm and welcoming place to pull up a stool and philosophize,
to plot your next caper and sip a good beverage with your significant other or
pal.

It’s moody and comfortable after sundown in the bar, which is where Little Lee
and I spent our time on this visit. We had dropped in several months back and
were impressed by the upscale décor, the wines, and the staff professionalism.
We immediately put it on our list as a return spot.

This day we tested the First Press Cabernet (Napa) and the Concannon Crimson &
Clover Red Blend at $10 and $7.50 the glass, respectively. First Press had a
little effervescence that reminds me of certain malbecs that I do not like, but
was still a pretty fair dry red and you might like it. The Concannon was bold
and smooth, exactly what we look for. In deciding which other red to order the
bartender kindly sampled us with an ounce of Legado Munoz Tempranillo which was
a bit bitey but we truly appreciated her hospitality and ordered more Concannon
for a second round.

Since our goal was just to kick back and talk about an upcoming drive to upstate
New York we have planned, we wanted to make an easy choice on the food. We
ordered a flatbread topped with arugula, laced with gorgonzola, fontina, brie
and pear, and christened with an onion spread, balsalmic reduction and walnut
oil.

The flat bread was fantastic. This 8 slice pie had the most delicious
combination of cheeses and succulent balsalmic. It’s Girlish
Foo-Foo-Pretty-Food, for sure. And that’s us.

In the past we ordered the Charcuterie (cured meats, old fashioned mustard,
cornichons & country bread) and it was pretty good. We also previously ordered the Truffle
Popcorn and it was tasty. Next time, we might order a miso salmon
burger and a grilled veggie sandwich.

We’ve never come to the Republic for Big Bites --- but we will. The fire
roasted cod, the 4 cheese lasagna and the seared ribeye all look great. Most of
the Big Bites are priced between $15 and $27, but there is the intriguing Heart
Attack Burger for $49 which consists of kobe beef, foie gras, black truffles,
brioche bread and a demi-glace. Twice the cholesterol at 3x the price. But
that’s the exception.

Although we will come back someday for dinner we for now will think of the Republic as a
grand place to relax and chat in a quiet and intimate bar. We love the dark
wood, the nooks and crannies. It’s a very nice place.

“Great food! Nice service!”

We tried Republic for the first time on a Friday night to celebrate my husband's birthday. Our OpenTable reservation was ready for us even though we were a little early, and the staff at Republic paid attention to the details of the "special requests" I added when making the reservation online. We had a nice romantic table for two overlooking the whole restaurant.
Even though the restaurant was packed with bar patrons, large parties, and small, our server was attentive, and took good care of us. We had a well paced meal, with a couple of small plates, some drinks and sandwiches for our meal. The food was all very good, and we would recommend it to friends, and will dine there again too.

Try the Bacon Wrapped Dates, Asian BBQ Ribs and Cheese Plate.

The Au Poivre Burger was to die for.

The Two Handed BLTA is NO joke. Too big to take a comfortable bite, but still quite delicious.

“Don't Bother!”

Our party of 5 made a reservation one week in advance for a birthday celebration on a Saturday night. While we arrived on time, we were kept waiting for 45 minutes for our table. The manager did come over after about 25 minutes to apologize for the wait, with two baskets of deviled eggs, which was very nice and they were tasty. When we were finally seated, we were seated at a table that was clearly meant for four people and the manager came over once again to apologize stating that as soon as a suitable table was available for our party size we would be moved. Then our waitress, who was wearing faded and torn jeans, informed us that the manager would like to buy us a round of drinks -- that was nice! After a time, they moved another table over to make our table large enough for our party. We order appetizers which consisted of Truffle Parmesan Popcorn (very good), half dozen oysters (good), stuffed dates (very good), and tuna sashimi, which was very good, although none of us recall the description stating that it came on a flatbread. Things went downhill from there. Most of our entrees came with a pleasing presentation, but had little if any taste. Two in our party ordered the Short ribs which looked attractive and like they should be quite tasty, but were quite a disappointment. I ordered the Cod over White Beans and Escarole and while the cod was moist and flaky, the beans and sauce were a tasteless disappointment. This restaurant was way overpriced ($200 for a party of 5 before tip, no dessert) for the quality of the food and the location. The chef needs to go back to spice 101 and whoever writes the menu needs to be more clear about what the dishes consist of. In addition, there was a flyer for what appeared to be a prix fix Valentine's Dinner Special on all of our menu's (Valentine's Day was the day before) and our waitress never informed us about it and there was no price on it. We heard about if after we ordered from another waitress informing the table next to us. I would not recommend this restaurant except for maybe drinks and appetizers and I would not go out of my way to go there again.
