We chose to stay in Trinidad due to the distance from our end location and quickly found that our number one restaurant choice had a private party and was closed for the night. The restaurant was colorful. The service was quick and friendly. They greet you with both chips and salsa AND a very unique slaw that had carrots, cabbage and capers with a very distinct delicious creamy vinegar. We even asked for seconds. I had the shrimp salad and was not disappointed with the doneness (very hard to get nicely cooked shrimp) and the ingredients of the salad. Our other party members enjoyed enchiladas, fajitas and a very unique chicken dish. The margaritas were good and the beer cold. After travelling for many hours, this was a welcome surprise.
