I need to explain that I have not stayed in this beautiful luxury boutique hotel in Telluride. I think I am too "Tripadvisor challenged" to figure out how to just review the restaurant. I have spent most of the summer in Telluride, and have consumed much great food and wine. Without question, however, our best meal of the summer was tonight at the new incarnation of this hotel restaurant, "Rev." The focus is on locally grown meat and produce, and the new chef (4 weeks) is outstanding. My husband had the Colorado lamb shank, and it was sublime. My spring pea risotto was extraordinary. Appetizers and dessert were at the same very high level. The personal service struck the exact perfect balance--attentive without being overbearing. Our host seemed genuinely pleased to welcome us, and this wonderful new (to Telluride) chef stopped by our table. Thrilled to know that this beautiful property now has a jewel of a restaurant--icing on the cake! Will return again and again.
