We were in Telluride and saw the Bistro as we were walking down Colorado Ave. . The menu of the day had a few specials listed but what caught our eyes were a spinach salad as well as an eggplant parmesan. The Spinach Salad had a hard boiled egg, mushrooms,panchetta, monchego cheese and was served with a balsamic vinegrette dressing. The Eggplant Parmesan was served with a side of pasta in a butter garlic sauce. Both dishes were excellent!
We watched what other people had ordered which included pizzas, salads, and pasta dishes. The people around us all were telling the waitresses how much they enjoyed their lunch choices.
The Bistro has a patio area that was lovely to sit in and listen to the background music.
This was just the perfect lunch in a perfect place and in a perfect setting!
