We were in Telluride and saw the Bistro as we were walking down Colorado Ave. . The menu of the day had a few specials listed but what caught our eyes were a spinach salad as well as an eggplant parmesan. The Spinach Salad had a hard boiled egg, mushrooms,panchetta, monchego cheese and was served with a balsamic vinegrette dressing. The Eggplant Parmesan was served with a side of pasta in a butter garlic sauce. Both dishes were excellent!
We watched what other people had ordered which included pizzas, salads, and pasta dishes. The people around us all were telling the waitresses how much they enjoyed their lunch choices.
The Bistro has a patio area that was lovely to sit in and listen to the background music.
This was just the perfect lunch in a perfect place and in a perfect setting!

Went out with the ladies to catch up. Great food, as always, and great service, as always. Interesting menu that is always showcasing a great special. You can count on the quality to be not notch each time you sent down for a meal.

I have lived in Telluride nearly 25 years. In that time I think I have seen all of the dining experiences. Only two Telluride venues seem to me to be equivalent to what we always thought of as the Michelin Guide 3 star rating -- worth a special trip. Those would be Bistro and Sheridan Chop House. Everyone else in town would be playing catchup. Both Chop House and Bistro are small. Both have continuity of staffing, especially in the back of the house, where the food is prepared. Bistro has the great advantage of a fantastic chef. Sergio is an L.A. guy, with training there and in Guadalajara, but his emphasis is Northern Italian, with not even a hint of Mexican cuisine. If you do any serious time in Telluride -- and who would not -- you would be crazy not to fit in a dinner at Bistro. You would also want to be greeted by the always stunning Marta Unnars, the 6-foot plus Icelandic bombshell redhead who serves most of the time as her own maitre'd.

Bistro is open during season for lunch and dinner. For breakfast, head to the Chop House, but be careful because when I am in town, Table 23 is mine.

Go here. Great pasta. Charming. Super attentive staff. Among top spots in Telluride. Particularly good carbonara.

1) This restaurant is no longer The Telluride Pizza Kitchen. Same building with more patio space in the summer and the same brilliant and inventive chef/owner Sergio Gonzalez. The pizza is very good but this is definitely not a "pizza joint"
2) This is far more than a simple regional restaurant in a mountain resort town. Sergio selects the best available ingredients, local when available, to create culinary delights out of a kitchen the size of a herring box. The man is simply brilliant in his love of cuisine and hospitality and bold in his sense of adventure with fresh food. He frequently changes the menu in response to customer requests and availability of desirable meats , fish and produce.

Under the direction of the stunning hostess/owner Marta Unnars the staff is professional, friendly, highly competent and eager to please. If you don't get what you want maybe you didn't ask for it. The staff is attentive but not prescient. In the winter the dining area is small but there is never any pressure to turn over your table. The dining room seats 36 and there are six places at the bar. The main dining area can be configured to seat larger parties. Reservations can be made at 970-727-5239. Your first visit will not be your last. If that is not the case they would like to know why.
