We loved our fabulous meal at Bistro CV-the service was only surpassed by the inventive cuisine. The server was also very knowledgable about the wine selection(he's actually going to be testing for his sommelier certificatioin in August!).

“Fun Shared Menu Concept”

We eat at Bistro CB regularly as Steamboat Springs residents. The concept is small shared plates. Brian Vaughn, owner/chef is regularly working at the open bar/kitchen and we like to sit up at the bar and watch him and his team perform their culinary magic. Front of the house manager Craig is very knowledgeable about wines, so ask him for suggestions. Their gourmet burger is worth the twenty bucks. Recommend this place.

“Fine dining at its finest.”

An exquisite experience. The menu is a fusion of American and French cuisine. A contemporary setting with a chef's table available for close-up seating. The bar is intimate and offers service for their 'small plates' with wine or other beverage. The wine list is well thought out and reasonably priced for the level of quality. Service is exceptional. A must see when visiting Steamboat Springs.

“Anniversary dinner divine!”

We had a 4-5 course dinner at Bistro CV (I don't know for sure, we also drank a lot of wine) and each plate was unique and delicious. There are many choices on the menu. Our waiter was very good - timing was nice, had good recommendations for dinner and a night on the town. Of everything we had, my favorite was the grilled romaine salad, which I came home and tried to recreate.

“Wonderful meal”

We went during happy hour and they had great prices on good wine and starters. Most of their dishes are unusual - we had fun trying some things we'd never had before. We loved the grilled romaine salad!
