While staying at the Viceroy, we dined in-house for both dinner and breakfast. Both meals were better than we expected. We weren't all that hungry and wanted to keep it light, so we decided to share an appetizer, a salad, and an entree. We began with the Gran's deviled egg. I was cautiously optimistic because I like deviled eggs, but had not seen anything like this on a top-notch restaurant's appetizer list and wondered what how it would look/taste. I was surprised at the large size of the egg, which made it easy to split. The presentation was elegant and the taste was fantastic! Next, we enjoyed a great Eight K salad which was also very large and everything tasted fresh and crisp. Finally, we enjoyed the pan-roasted halibut which was to die for. The halibut was cooked to perfection and we both thought it was among the best we ever had. We enjoyed our food so much, we decided to return to try out the breakfast buffet the next morning. That's when we found out that they make all of their own bacon, yogurt, granola, pastries etc. Although pricey at $20.00/person, it does include coffee but not juice. The bacon was superb as was the other items I mentioned and the scrambled eggs. You can order omelets too, but we wanted to enjoy everything on the buffet and just couldn't eat more. If your in Snowmass village, the Viceroy is a great place to stay, but try out 8k at least once.
