We have a vacation home in Salida Colorado and like to dine out often when we are in town. The old "First Street Cafe" was a favorite breakfast spot for many years but the owners had to close shop due to health concerns. Shallots opened In the same building last year. Having heard many fine reports from locals, we decided to try it ourselves for dinner tonight. Our expectations were high, and we were not disappointed.
To start we has the pot stickers (served with a yummy soy/ginger sauce). The dinner salad was good but the dressing (tomato, shallot, vinaigrette) was fantastic. The Stuffed Chicken Marsala was out of this world (stuffed with goat cheese and served with pasta, marinara sauce and asparagus).
My husband had the ribs and they were also very good. A little heavy on the sauces for his particular taste but cooked right and served with great sides.
When you visit Salida, add Shallots to your A list. They are open for breakfast (in season), lunch and dinner. We have heard that the cocktail menu is extensive as well.
