My husband and I have been going to the Mill Stop for the last 20 years, and have never had a bad meal or experience here. The service (family run) is always friendly, and they get you seated as quickly as possible, even when they are busy. There is a process where you might be seated initially at the bar, offered some water and menus to peruse, and then relocate to a booth when it becomes available. It seems to work, and we are always so happy to be there with the yummy smells, that knowing the great food is imminent just whets our appetite.
I should note that we don't actually live in Pueblo, and have been known to drive rapidly for over 2.5 hours to get here before closing on Friday nights because they are not open weekends. (They have, however, reopened Estellas in Colorado Springs which is open on weekends, and has the same great food, although a more restaurant-like atmosphere.) We tend to prefer the Mill Stop, with its signature poster of child with spaghetti on head, and family pictures.
I love the heuvos rancheros here, and also get a chicken taco on white. The family recipe green chili is the best I have EVER had, and we eat out frequently. And even when you are stuffed, you will likely make room for the complimentary huge sopapillas with cinnamon sugar and honey. Ok, now I am really, really hungry.....
