We followed a friend’s suggestion to try Santiago’s for good Mexican food. We’ve had lunches there and the food and service have been very satisfying. There is a good selection of traditional Mexican dishes with salsa choices from mild to hot. Servings are reasonably priced and portions are quite generous. Having lived in New Mexico for 30 years, we were happy to find a northern Colorado restaurant serving excellent sopapillas. The staff efficiently managed the busy lunch crowd.
